Dining Services’ hosts a Taste of Morocco

PULLMAN — During the week of Feb.  25 to Feb. 29, WSU Dining Services will feature “A Taste of Morocco” at each of their three primary dining facilities:  Hillside Café, Northside Café, and Stephenson Dining.
Throughout the week, the following menu items will be available:
Hillside Café (11:00 am – 1:30 pm, Monday – Friday)
Available at the Carvery:
Monday – Moroccan Chicken Breast Sandwich with a Spicy Chipotle Sauce, Steak Fries, and Fresh Fruit
Tuesday – Beef Tagine with Cauliflower and Vegetarian Rice Pilaf
Wednesday – Lamb and Cayenne Kefta Burger on a Toasted Sesame Bun and Tater Tots
Thursday – Moroccan Chicken with White Rice and Fresh Vegetables
Friday – Moroccan Baked Fish, Steamed Red Potatoes and Fresh Vegetables 
Northside Café (11:00 am – 2:00 pm, Monday – Friday)
Monday – Moroccan Brisket with Olives and Spiced Aubergine(Eggplant) Salad  
Tuesday – Salmon with Charmoula and Orange Rice
Wednesday – Grilled Moroccan Spiced Flank Steak, Moroccan Pilaf, and Roasted Carrots
Thursday – Moroccan Chicken and Moroccan Couscous with Raisins
Friday – Beef Tagine with Sweet Potatoes   
Stephenson Dining (11:00 am – 1:30 pm, 4:30 pm – 7:30 pm, Monday – Friday)              
Monday –Moroccan Chicken with White Rice and Barley Morocco 
Tuesday – Moroccan Braised Beef and Harissa Vegetables
Wednesday  – Moroccan Chicken Stew with Couscous, Ghoriba (Almonds & Macaroons), and Batinjaan Zalud (Eggplant Salad)
Thursday – Bania (Beef & Okra Stew) and Moroccan Vegetable Tagine
Friday – Moroccan Cod with Charmoula and Couscous Marrakuh  
In addition to culinary tastes, cultural information about Morocco will circulate in the dining facilities throughout the week.  Look for information about government, economy, culture and more.  A Taste of Morocco is the sixth installment in Dining Services’ Passport To A Culinary Adventure.  Dining Services would like to invite students, faculty, staff, and members of the Pullman community to submit suggestions for recipes and themes as we begin preparing for our Adventure during the
2008-2009 Academic Year.
