Balance is better at WSU Dining Services

House-made alkaline noodles, sous vide salmon fillets and WSU Cougar Gold potatoes au gratin are among the new, balanced dishes created by the chefs at WSU Dining Services for the special Balance is Better event!  Satisfy your taste buds on Sept. 22, 23, and 24 and enjoy a variety of fresh locally-sourced meals.  Balanced plates contain 50 percent of the plate covered with fruits and vegetables, 25 percent whole grains and 25 percent lean protein with a side of dairy.

The event begins at Northside on Tuesday for dinner, continues with lunch at Hillside on Wednesday and wraps up with dinner at Southside on Thursday.

The menu includes these dishes and more:

  • Hillside– Tonkatsu Stock from Omache Farms, Sous Vide Local Salmon Fillets with Shichimi
  • Northside– Pan seared Omache Farms pork chop with peach and chili compote, Allan Farms braised kale greens
  • Southside– Palouse red lentil, Allan Farms kale and amaranth, St. Maries wild rice pilaf with toasted almonds and cranberries
