PULLMAN, Wash – Palouse Ridge Golf Club is getting a new eatery thanks to a partnership between WSU and a pair of local restaurateurs.

The new restaurant and bar will be called Roundtop Public House, operated by JW Links, LCC. Co-owners Jim Harbour and Wade Dissmore also own and operate Southfork Public House in Pullman and Fork in the Road Catering.

“We are very pleased to partner with Wade and Jim on this new venture,” said Stacy Pearson, vice president for finance & administration. “The university sought proposals for new concepts and to determine if there was an opportunity to improve financial returns for the operation of the space after working with our previous partner for more than a decade. We look forward to Roundtop Public House being a premiere destination for our community when it opens this spring.”

More than 8,800 square feet of space – including the restaurant and bar area as well as the accompanying pavilion – is being leased for five years, with an option to extend the agreement to a full decade. Renovations are currently underway and the new restaurant is expected to open in time for the start of the golf season at Palouse Ridge. The new operator will honor previous event bookings.

WSU stands to earn 5% on gross annual sales exceeding $1.3 million, in addition to the annual base rent of $100,000 in the first year.

Banyans on the Ridge operated inside the clubhouse at Palouse Ridge Golf Club since its debut in 2008. Its operators are planning on opening a new Italian eatery in downtown Pullman.

“Banyans has been integral to the success of the Palouse Ridge Golf Club since it debuted in 2008 and we thank them for being a good partner,” Pearson said.

Fork in the Road provides the concessions for the new Cougar Den within Beasley Coliseum, offering an array of food options as well as beer and wine.

Both Dissmore and Harbour grew up in Pullman and graduated from WSU.
