Carlita’s Mexican Grille & Espresso Slated to Open in Renovated CUB Aug. 11

PULLMAN, Wash. – Carlita’s Mexican Grille & Espresso will open at the newly renovated Compton Union Building (CUB) Aug. 11.  Hours of operation will be 7 a.m. to 2:30p.m., Monday through Friday, until Aug. 25, when operating hours will be extended to 7 pm.
 
Featuring authentic Mexican cuisine, the restaurant’s menu will include a wide variety of selections for breakfast, lunch, dinner, dessert and snacks. Carlita’s intends to use 100-percent biodegradable and recyclable service- and beverage-ware.
 
The restaurant has partnered with Spokane-based coffee roaster Thomas Hammer to offer coffee and espresso made from organic and fairly-traded beans. A unique drip coffee blend using South American coffee beans has been created by the roaster exclusively for Carlita’s.
 
Carlita’s will also serve genuine tortillas and corn chips made from the traditional family recipes of the De Leon family of De Leon foods, another Spokane-based company.  The De Leon family uses Shepherd’s Grain flour, which is grown by an alliance of local farms committed to sustainable practices in making their products.

Carlita’s Mexican Grille & Espresso is operated by Dining Services. Students can use their Residence Dining Account at Carlita’s. Cougar CASH customers realize significant savings at all Dining Services locations on campus.
