PULLMAN, Wash. — Indulge yourself with on-campus, gourmet fine dining experiences Friday evenings before the final two Washington State University home football games this season. The dinners are part of WSU’s enhanced football weekend activities.
Students studying hospitality business management are preparing and serving four-course meals with wines at 6 p.m. on Nov. 7 and 14 in the Todd Hall Dining Room 268. Working with them are HBM culinary educator and chef Gene Fritz and catering director Brad Porter, both alumni of the program.
The cost per person is $50, including a wine selection paired with each food course. “Our menus feature seasonal and regional foods selected and prepared to provide the most flavorful and dynamic dining experience available on the Palouse,” Fritz said.
On Nov. 7, the evening before the Cougars versus UCLA game, the menu is grilled U-10 sea scallops with ginger-wasabi beurre blanc, micro greens and beet-curry oils; hearty Palouse lentil and smoked Cougar sausage soup topped with roasted garlic-leek flan and caramelized shallots; applewood-smoked sablefish, Peruvian garlic-infused mashed potatoes, and broccolini sauté, with Bourbon-apple beurre blanc and caviar Quenelle; apple-dried cherry tart with sour cherry and cinnamon ice cream, fig-huckleberry compote, and huckleberry coulis. Gordon Brothers wines will be served.
On Nov. 14, the evening before the Cougars versus Arizona State game, the menu is layered wild mushroom and chevre tart with caramelized leeks and beet-truffle oil; roasted pumpkin-salmon bisque with curried cream and pumpkin oil; braised lamb shanks with wild mushroom and truffle-laced polenta, Brussels sprout and pearl onion sauté, with huckleberry-lamb reduction; pumpkin and chocolate mousse Napoleon with cranberry-ginger ice cream and persimmon-vanilla essence. Chateau Ste. Michelle wines will be served.
