Great time to get some high quality beef The WSU beef production system keeps humming and always involves the best care and thoughtful genetic selection in order to make a premium product. This round of locker-style beef sales is again Wagyu influenced and will be high choice or prime grade. After harvest the beef is dry-aged and hand cut. Know where your beef comes from–WSU bred, born, raised, finished and cut! This beef production hinges on student help, enabling them to get first hand experience with beef production.

Pricing: Whole or half = $3 per pound of hanging weight

Quarter = $3.10 per pound of hanging weight

A hanging weight will be around 700 to 800 pounds. Staff at the WSU Meats Lab turns it into the cuts you want and wraps it for $0.81 per pound of hanging weight. A whole beef will likely result in 400 to 425 pounds of cut and wrapped meat, depending on how you ask to have it cut.
