
TRI-CITIES — Eveline Bartowsky, senior research microbiologist at the Australian Wine Research Institute, will present a seminar entitled “An Overview of Wine Microbiology Research at the Australian Wine Research Institute,” 2 p.m. Friday, June 12, on the WSU Tri-Cities campus.
Bartowsky’s talk focuses on how winemakers can manage populations of yeast in must and wine to ensure desired flavor outcomes. In particular, she will discuss non-Saccharomyces yeasts and their interaction with Saccharomyces cerevisiae wine yeast and their impact on wine quality. Through a review of yeast physiology, she will explain how winemakers can manage these populations for best success in malolactic fermentation.
Bartowsky’s research interests also focus on improving the management of malolactic fermentation to achieve the best aroma and flavor profiles. She is manager of the AWRI Wine Yeast and Bacteria Culture Collection. (For additional information on Bartowsky, click here.)
