PULLMAN, Wash. – Forget spaghetti and meatballs. Anyone hungry for the “real deal” Italian cuisine experience will find just that at the Washington State University School of Hospitality Business Management’s annual Taste of Italy on Wednesday, Oct. 30.
The event starts at 6 p.m. in the J. Willard and Alice S. Marriott Foundation Hospitality Teaching Center (Todd 268). Cost is $125 per person. Participants must register by Monday, Oct. 28, at http://www.alumni.wsu.edu/SHBMTasteofItaly.
Guest executive chef Andrea Trapani, head of the culinary and baking department at the Apicius International School of Hospitality in Florence, Italy, will join WSU hospitality executive chef Jamie Callison to prepare an authentic Italian meal. Italian sommelier Massimo Coppetti and Darel Allwine, Col Solare assistant winemaker, will complement the menu with select paired wines.
Hospitality students gain professional experience during the event by helping prepare and serve the food.
The menu includes appetizers, a dinner of poached quail eggs served with truffle potato foam and two courses: pasta with Wagyu beef ragu and duck thigh stuffed with Swiss chard and Colonnata lard. All courses are served with vegetables from the WSU organic farm. Dessert is a chocolate, orange and extra virgin olive oil mousse cake on a pistachio cookie.
Proceeds from the Taste of Italy dinner support College of Business study abroad scholarships to the Apicius school. Every summer, Callison travels with students to the Antinori Estate – Tenuta Guado Al Tasso in the Bolgheri region, where world renowned chefs and vintners teach them the art of creating five-star cuisine and producing and pairing correct wines.
Callison also has released a new cookbook, “The Crimson Spoon: Plating Regional Cuisine on the Palouse,” showcasing some of his signature pasta recipes developed on study abroad experiences at Apicius.
