College of Business fundraiser recreates a night in Italy

PULLMAN, Wash. – A spirit of amore could very well be in the air on Halloween night at the Washington State University College of Business “A Taste of Italy” dinner fundraiser.

Guest Executive Chef Andrea Trapani, head of the culinary and baking department at the Apicius International School of Hospitality in Florence, Italy, will prepare an authentic, Italian meal served at 5 p.m. Wednesday, Oct. 31, in the hospitality dining room, Todd Addition 268. College of Business hospitality students will work alongside Trapani to prepare the meal, which will include citrus salad and calamari, beef tartare and boiled beef bread rolls with salsa appetizers; main courses of duck foie gras in orange glaze and a variety of gourmet meats with vegetables; and a signature dessert. A selection of Northwest Tuscan-style wines will be served.
Proceeds will go toward scholarships for students studying hospitality business management. The program started in 1932, making it the third oldest of its kind in the country. The School of Hospitality Business Management is consistently rated in the top 5 percent of the 170 similar programs in the nation.
“The hospitality industry is one of the largest in the world,” said Nancy Swanger, director of the school. “Our hospitality degree prepares students for hospitality careers across the globe in management, lodging and food service segments as well as operations, revenue management, sales, event planning and consulting.”
