PULLMAN – WSU Dining Services will feature “A Taste of Scandinavia”  Dec. 3 – 7 at Hillside Café, Northside Café and Stephenson Dining.
In addition to culinary tastes, cultural information about Scandinavia and the five Scandinavian countries (Denmark, Norway, Sweden, Iceland and Finland) will circulate in the dining facilities throughout the week.

“A Taste of Scandinavia” is the fourth installment in Dining Services’ Passport To A Culinary Adventure.  “A Taste of Australia: will be featured in January. The rest of the year is as follows:  February – Morocco; March – Turkey; and April – Thailand. 

Dining Services invites students, faculty, staff, and members of the Pullman community to submit suggestions for recipes and themes as they begin preparing for new adventures for the 2008-2009 academic year. 

Beginning at 11 a.m. during each day of the adventure, a different Scandinavian menu item will be featured at each of the dining facilities. The menus are as follows:

Hillside Café : Available at the Carvery:
Monday – Grilled Swedish Meatball Kebab’s, Browned Buttered Caraway Noodles, and Fresh Vegetables
Tuesday – Chicken Fricassee with Creamy Sweet and Sour Dill Sauce
Wednesday – Danish Meatloaf, Caramelized Potatoes, and Fresh Vegetables
Thursday – Grilled Leg of Lamb with Spiced Mustard and Rosemary, Potato Gratin with Juniper, and Fresh Vegetables
Friday – Baked Icelandic Cod with Dill Sauce, Pickled Cucumber and Potato Salad, and Fresh Vegetables,   Gravlax on Rye Toast Points with Cream Cheese

Northside Café:
Monday – Kottbullar (Swedish-style Meatballs), Boiled Potatoes, and Red Beet Salad
Tuesday – Scandinavian Dried Fruit Soup, Julekake (Norwegian Christmas Bread)
Wednesday – Stegt Gas (Roast Goose), Fyldt Med Aeble (Apple Stuffing),and Blomkalsgrantin Med Ost (Cauliflower with Cheese).
Thursday – Ableskiver with Applesauce, White Christmas Glogg
Friday – Wallenberg Steaks, Finnish Carrot Casserole, and Perunagratini (Scalloped Potatoes)

Monday – Chicken with Balsamic Vinegar and Norwegian Red Cabbage
Tuesday – Browned Buttered Caraway Noodles and Swedish Meatballs
Wednesday – Kalvefilet (Veal with Sour Cream and Goat Cheese), Rutmas (Potato and Rutabaga Mash), and Swedish Rice Pudding
Thursday – Norwegian Pancakes and Spinach, Onion, and Feta Pie
Friday – Potato, Onion, and Anchovy Casserole, and Danish Hash
