“High standards for food”

WSU chef receives accreditation, honor from ACF

PULLMAN, Wash. – Derek Rice, Washington State University Dining Services chef, has been accredited as a certified executive chef by the American Culinary Federation. To be accredited, Rice had to successfully complete a one and a half hour written exam and a three hour practical exam.
 
According to the ACF, the executive chef certification is designed to identify those chefs who have demonstrated a level of culinary competence and expertise through their education, work experience, culinary knowledge and skills that is consistent with the executive chef level.
 
Rice has "reached a benchmark of skills and culinary experience with high standards for food preparation." He also "shows working knowledge of culinary nutrition, food safety and sanitation and supervisory management has been demonstrated," according to the ACF. 
 
Rice is the Southside Café chef manager, is an ACF certified sous chef and has received the ACF Medal twice in his career. For more information on the ACF, visit their website.
